<p>On Day 1, after my gourmet neighbors and close friends Barbara and Stephen Boyd called to wish me luck, I began with poached eggs on buttered toast — and could not have been happier. Lunch was a peanut butter sandwich, and I started to count slices of bread available for the remainder of the week. Would that staple last? </p>
<p>Dinner was pasta with a flavorless canned tomato sauce, which I spiked with part of an onion and some garlic. I was trying to be purist and not open my spice shelf. </p>
<p>The first lesson from a tight and healthy budget: Food did not taste very good.</p>

<p>Day 3: Back to the trusted poached eggs, which were now savored with every bite. Lunch was black bean and corn salad with Rotel tomatoes, which I wish I had added to the pasta sauce. This tasty item was great. Dinner was buttered pasta, and I really wish I could make use of that hunk of parmesan cheese sitting on the shelf in the fridge.</p>

<p>Day 5: More eggs, and I broke down and had a package of Ramen noodles. Full of salt and chemicals, it was the tastiest thing I had eaten all week, and I consider it to be borderline poison.</p>
<p>One very large upside of the SNAP diet is that I could not afford to eat processed food. Beer and wine were obviously out, but I couldn’t afford coffee, tea or soda either. So water and more natural foods were better for me, but folks on this diet rarely have the time to eat what is good for them.</p>

<p>I set out to prove one could eat a healthy diet on $30-per-week budget. In many ways I succeeded — no junk food, red meat, processed food and very little sugar or cornstarch. But mine certainly was not a healthy diet, consisting as it did of zero fruits or vegetable and, other than eggs, very few proteins.</p>
<p>For someone who is somewhat of a foodie, I was bored with the flavors and the process. I was concerned about the lack of nutrition and variety. Those who are on this diet by necessity, and not for sport, face a daily challenge to overcome these obstacles. Who can blame them for their candy bars and corn chips every now and then?</p>
